A Not So Average Christian Family - Living, Loving, And Learning Together

This recipe originally came from the Duggar Family Website, so I’m giving credit where credit is due, but we’ve tweaked their version to our own liking and made it our own family favorite! The places where I have variable amounts, we normally use the least amount on the more expensive items, and the largest amount on the more inexpensive item to make it more frugal and delicious!

1-3 pounds ground turkey or hamburger
1 med. onion, chopped
3 (4oz.) cans chopped tomatoes with green chilies
3 tsp. salt
1 1/2 tsp. pepper
3 pkg. taco seasoning
3 pkg. ranch or 1 c. liquid ranch dressing (optional)
9 (14 1/2 oz.) cans diced tomatoes, undrained
3 (15oz.) cans kidney beans, undrained
6 (15oz.) cans pinto beans, undrained
6 cups water
(note: on the beans we usually make our own from dried in the crockpot and use about 8-10 cups total either with kidney and pinto or just one of those…whatever is on hand)

Brown ground meat with onion and then put all ingredients into a large stock pot. Bring to boil, then turn to low and simmer 30 minutes. Serve with tortilla chips or corn chips, grated cheddar cheese and sour cream.

I’ve been feeling baby wiggle since yesterday. Oh that incredible feeling brings tears to my eyes…so sweet, tiny, and not able to live outside my body just yet, but so full of life from the Lord! I’m feeling great and enjoying this pregnancy so much! I had a prenatal appointment the other day and everything is going well in that area.

We heard this blessing’s heart beat again and it’s always such a sweet sound. Our little 5 year old came with us and the doctor let her squirt the gel stuff on my belly and find the heartbeat with him. That was a very special time to her and to my husband and I. My mother in law came by yesterday to drop off our oldest son from a guitar lesson with grandpa and she was telling her all about what our baby sounded like!

I just love this and can’t imagine the time, although I know it’s coming, when life will no longer be given to my womb. Hopefully when that time comes, or shortly after, the Lord will have blessed us with grandchildren to enjoy just as much as our own! WOW in just a few short months I will be the mother of 7 children, and if those children average just 2 children each we’ll have 14 grandchildren…what an incredible blessing the gift of life is to a married couple, and that gift keeps on giving into future generations! Praise The Lord!!
